Literally and figuratively elevating the dining experience, Alizé at the top of The Palms Casino Resort is debuting a brand new coffee and tea program. Now included in the tasting menu experience, when guests order coffee at the conclusion of their meal, it will be served from a Cona Vacuum coffee maker that is assembled then presented at the table, creating a private mini-spectacle, available only at Alizé.
“Once assembled, these Cona coffee makers look like works of art,” muses Joseph Marsco, director of operations and managing partner, Alizé. “Our guests expect an extraordinary experience when they dine at Alizé, so we decided to ensure it is unforgettable—all the way through coffee service.”
The Cona Vacuum coffee maker is manufactured in England and works by heating the water and then the coffee itself through a vacuum pot system. With the introduction of drip coffee makers, which became popular in the latter 20th century, classic vacuum pots such as these briefly lost momentum but are now experiencing a comeback, thanks to coffee connoisseurs looking for more out of their experience. This coffee maker’s sleek glass system is deceptively easy to use, utilizing a glass rod method of filtration versus a cloth filter. As a result, not only are there no filters to ever replace, but the coffee does not come in contact with the metal, resulting in clean and bold flavors.
Boulder City, Nev.-based Colorado River Coffee Roasters created two special blends: the Red Wall and Cascadia Decaf blends. Alizé’s Executive Chef Mark Purdy collaborated with Colorado River Coffee’s Roastmaster Erik Anderson and, together, they created the proprietary Red Wall blend named after formations at the neighboring Grand Canyon. The flavors are inspired by the canyon and include sweet fruit, cocoa and soft nutty flavors with a bright finish. The Cascadia Decaf blend is a certified organic product featuring beans from Asia, Central and South America.
Accompanying the coffeemaker is a 3-tiered cylindrical glass container that contains honey for the tea or chantilly cream for the coffee, two types of sugar, shortbread and biscotti to further enhance the experience. The new coffee service averages 10 minutes.
For guests ordering tea, a modern-shaped pot arrives at the table, in which the loose-leaf tea varieties are steeped. Blending a striking design and high functionality, the minimalist teapot is stainless steel and glass, showcasing the leaves as they unfurl. Alizé offers 12 unique teas including Eight Treasures Herbal Decaf; Giddapahar First Flush Darjeeling; Jin Ya (organic golden buds); Anxi Wulong tea; Black Puer tea; Bai Cha Organic green tea; Silver Needles organic white tea; Gong Fu organic black tea; Tai Ping organic green tea; Mo Gan organic yellow tea and Da Hong Pao Rock Wulong tea.
The decadent 7-course tasting menu is served nightly and features three selections for each course: The first item in each course representing Chef Purdy’s modernized take on fine French cuisine; the second item paying tribute to André Rochat’s original and renowned recipes and the third item offering is a phenomenal vegetarian option.
