OTTO to Combine Pizza and Mardi Gras for a Special One-Day-Only Tasso Ham Pizza 

 

Tomorrow, celebrate National Pizza Day at Las Vegas’ top-rated OTTO Enoteca e Pizzeria at The Venetian. OTTO is Mario Batali’s signature pizza restaurant and known for its ever-evolving menu of thin crust Roman-style pizzas, antipasti meats and cheeses, salads, pastas and main dishes.

OTTO will be celebrating National Pizza Day as only they can: by adding some festive Mardi Gras touches to their festive Tasso Ham Pizza ($21) that will only be available on Feb. 9. The pizza will feature house-cured and smoked Tasso ham, which is actually a cured and smoked pork shoulder (not ham) rubbed with a Cajun-style spice mixture containing cayenne, garlic and other spices. Pickled peppers and Buffalo mozzarella complete the pizza.

 

PIZZA FUN FACTS

Since opening in 2007, OTTO has sold close to 500,000 pizzas, averaging just more than a 1,000 a week.

 

One of their top sellers remains the Margherita with tomato, buffalo mozzarella and basil. This pizza is so popular, it sells out its two closest rivals, sausage-and-peppers and pepperoni, almost two to one. Although it is not one of the best-selling pizzas, one of the most unique dishes served at OTTO is the pancetta and goat cheese pizza, topped with caramelized onions and Cypress Grove cheese.

OTTO is also known for its seasonal pizzas. Utilizing only the freshest ingredients of the season, the current pizza for winter is its Brussels sprouts pizza. Along with mozzarella and prosciutto, the pizza is topped with preserved lemon rinds that provide an extra citrus kick to this scrumptious dish. The pizza will be available through the end of February.
Finally, OTTO stacks the pizza dough to proof for 24 hours, resting in boxes that are 3.5 inches tall. If all the dough for all 500,000 pizzas OTTO has sold since it opened was placed one dozen to the box to proof and then stacked, all of the boxes would be as tall as 10 ½ Stratosphere Towers or 12,152 feet high (200 feet taller than the top of Mt. Charleston from sea level).
