TOM COLICCHIO’S HERITAGE STEAK BRINGS OPEN FLAME COOKING TO THE MIRAGE

Tom Colicchio’s Heritage Steak, the newest restaurant from the James Beard Award-winning chef, presents open flame cooking, the culinary art of preparing meats using wood-burning ovens and charcoal grills. Now open at The Mirage, the warm and inviting 230-seat restaurant showcases Colicchio’s passion for cooking with fire, as each dish is prepared to bring out the rich flavors in the cuisine while using the freshest ingredients available. Located within the iconic resort’s lush garden atrium, the restaurant is open daily for dinner.

The menu focuses entirely on meats prepared over an open flame using a charcoal grill, wood-burning oven and a Grillworks Infierno, a versatile grill that also serves as a hearth, smoker, broiler and more. Colicchio uses a variety of specialized cooking methods when preparing the restaurant’s antibiotic-free meats, including Brandt Beef and Snake River Farms, which he sources from ranchers across the United States. Dishes include a New York Strip Steak with Pepper Chutney Bordelaise and Duck Breast with Duck Chorizo and Smoked Peaches along with a robust selection of seasonal side dishes to accompany menu selections.
Colicchio said, “There’s something inherently wholesome about cooking over an open flame. It preserves the integrity of each ingredient and enhances natural flavors. I’m excited to explore this time-honored way of cooking at Heritage Steak.”
Heritage Steak’s beverage program features an extensive selection of wines, a variety of specialty cocktails and craft beers on tap.  A collection of rare and high-end whiskies are a highlight of the beverage menu.
Designed by Bentel + Bentel, the restaurant welcomes guests with a glowing hearth and an expansive photo mural featuring charred firewood by photographer Amanda Weil. The rustic vibe, both natural and modern, includes a leather-clad wall and walnut-beamed ceiling. Guests wishing to grab a quick bite or cocktail before an evening out can make themselves comfortable in the handsome lounge and will enjoy plush banquette seating. The restaurant also features an intimate private dining room for special events and gatherings.

About Tom Colicchio
Originally from Elizabeth, New Jersey, Tom Colicchio is the chef and owner of Craft, Craftbar, ‘wichcraft, Colicchio & Sons and Riverpark in New York, Craft and Craftbar in Los Angeles, Craftsteak at the MGM Grand Las Vegas and Craftsteak at the MGM Grand Foxwoods. He was the co-founder of Gramercy Tavern, along with Danny Meyer. Most recently, he opened Topping Rose House, the inn and restaurant he is operating in Bridgehampton, New York. Colicchio has been recognized by the James Beard Foundation throughout his career and earned the “Outstanding Chef” award in 2010, the culmination of his 30 years of hard work in the restaurant industry. He has published three cookbooks and is the head judge of the Emmy-winning culinary series Top Chef, which premieres the 11th season this fall. Colicchio also appears in and serves as executive producer on A Place at the Table, Participant Media’s documentary about food insecurity in America, produced and directed by Kristi Jacobson and Colicchio’s wife, Lori Silverbush. A Place at the Table was released by Magnolia Pictures earlier this year. Giving back to the community is also important to Colicchio, and he supports charities including Children of Bellevue, City Harvest, Alex’s Lemonade Foundation, United Way of New York and Food Bank for New York City.
