Stockman’s Steakhouse, located inside Laughlin’s premier casino resort, Edgewater Casino Resort, has unveiled a refreshed menu featuring elevated soups, salads, starters and entrées with a bold focus on classic barbecue flavors.

Guests can start their meals with an array of flavorful appetizers including the cornmeal-crusted calamari made with charred jalapeños, chili, and garlic aioli, priced at $17; fried baby back ribs, house-smoked and coated in signature breading, green chili, and served with chorizo gravy, priced at $16; and grilled and chilled shrimp cocktail served with orange and smoked chili cocktail sauce and mango salsa, priced at $17.

For a warm and hearty start, the short rib chili, priced at $12, is a savory dish topped with green onion, sour cream, sharp cheddar cheese and served with a side of honey-butter cornbread. The Southwest chopped salad combines iceberg lettuce, smoked bacon, charred corn, tomato, boiled egg, and queso fresco, served with a smoked garlic barbecue ranch sauce for $13.

Stockman’s has introduced smokehouse favorites including the St. Louis style ribs served with grilled corn and coleslaw, priced at $35; bourbon braised short ribs with crispy garlic-parmesan potatoes, priced at $35; and the barbecue platter featuring a delightful feast of ribs, smoked brisket, hot links, barbecue baked beans, coleslaw, and a side of honey-butter cornbread, priced at $38. The barbecue half chicken, glazed in Stockman’s signature whiskey barbecue sauce, rounds out the offerings, served with cornbread and coleslaw, priced at $32. All entrées include a choice of soup or salad, with the option to upgrade to a premium soup or salad for an additional $5.

New entrées highlight bold flavors and fresh ingredients, including blackened snapper with lump crab meat, bacon-braised collard greens, and fregola pasta, priced at $36; Louisiana-style barbecue shrimp with barbecue butter on fresh shrimp and smoked bacon, and is served with white rice and grilled bread, priced at $32; and belly-on pork chop, brined and roasted with a side of rosemary-parmesan crispy potatoes, priced at $32. The seafood fry brings together fried snapper and shrimp with a side of coleslaw, Old Bay fries, and malt-vinegar aioli cocktail sauce, priced at $34. All entrées come with a choice of soup or salad, with the option to upgrade to a premium soup or salad for an additional $5.
