Time to mim-mosey on over to Pine Bistro. The Mediterranean dining-and-nightlife experience from AYYA Hospitality Group will launch Southern Highlands’ first Mediterranean-inspired brunch on April 27. Delivering a social and energetic atmosphere every Saturday and Sunday, guests can expect elevated breakfast classics, Strip-caliber cocktails, a premier craft hookah program and beats spun by local DJs.

“Brunch isn’t just a meal – it’s a weekend ritual – and we’re excited to shake things up in Southern Highlands with a completely new brunch experience,” said Lowell Raven, partner and Vice President of AYYA’s global operations and brand experience. “Whether you’re kicking off the weekend or recovering from last night’s adventures, our brunch promises a fusion of good vibes, delicious food and exotic drinks that will transport you to the Mediterranean.”
Pine Bistro’s brunch will take place every Saturday and Sunday from 11 a.m. – 2 p.m. Highlights include:
- Twists on Breakfast Classics: Enjoy elevated breakfast items like the Chili Shrimp Bagel, served with roasted tomatoes, sweet chili paste, smoked green pepper, cream cheese and baby arugula; Pine Avocado Egg Toast, made with poached eggs, grilled sourdough bread, roasted carrots, spicy mayo, olive oil and arugula salad; the Mediterranean Omelet, comprising of organic eggs, baby spinach, roasted peppers, feta cheese, kalamata olives and hummus; and Chicken & Waffles, which comes with crispy chicken and buttermilk waffles topped with sweet and spicy sauce, sesame seeds and maple syrup.
- Boozy Brunch Beverages: Using traditional flavors from the Mediterranean and Lebanon, Pine Bistro’s standout cocktail creations include the Bearclawajillo, an almond inspired version of the popular espresso cocktail; P.O.G.G Brunch Punch, a shareable drink for up to four people made in collaboration with FeverTree; the Bistro Bloody Caesar, topped with Mediterranean pickles and radish, bacon and olives; and a Maple Bacon Old Fashion with a bacon strip garnish.
- Smokin’ Hot Hookah: Pine Bistro is home to Las Vegas’ first curated craft hookah program, boasting classic smoke blends like Double Apple, White Gummy and Peach Ice. For a twist, guests can elevate their experience by infusing spirits into the hookah base, choosing from delicious flavors like Watermelon Mojito or Boozy Berry, or opt for a refreshing mocktail alternative.
- Electric Atmosphere: Pine Bistro will kick into high gear with a local DJ providing the beats. The restaurant houses a custom-made DJ booth, where a range of Las Vegas-based talent will play music emulating the sounds of Mykonos and Mediterranean entertainment.
Also open for dinner daily, Pine Bistro offers a rich selection of Mediterranean and Lebanese cuisine, curated to celebrate the region’s flavors, culture and nightlife. Within the 3,500-square-foot interior, guests can enjoy the ambiance of the main dining area with open kitchen views, a stylish bar and a lounge adorned with design elements inspired by the Mediterranean.
