Pancho’s Mexican Restaurant, the vibrant Mexican hacienda in Downtown Summerlin, invites guests to ring in 2025 with festive offerings for New Year’s Eve and New Year’s Day. Guests can toast to the new year with a special on bottles of sparkling brut all day on Tuesday, Dec. 31, followed by a spicy bloody maria on Wednesday, Jan. 1, to kick off the new year and National Bloody Mary Day with some heat.

To celebrate New Year’s Eve, guests can enjoy $10 bottles of sparkling brut all day long. While sipping on bubbly, guests can also indulge in shareable dishes as they prepare to ring in 2025. Popular shareables include the Botanas Especiales Los Panchos platter, featuring flour quesadillas, piernitas de pollo (chicken wings), taquitos dorados and chicken flautas or dive into Pancho’s nachos—crispy tostaditas layered with beans, melted cheddar and Jack cheeses, diced tomatoes, jalapeños, sour cream and guacamole. The sparkling brut sets the tone for a festive celebration, making it a delightful addition for groups toasting to 2025.

 

Pancho’s spicy bloody maria adds extra heat to the traditional cocktail for the new year. Made with tequila, house-made bloody mary mix, lemon juice, Worcestershire and Tapatío sauces, it is served in a poco grande glass with a Tajín rim and garnished with two pimento-stuffed olives and a fresh jalapeño pepper, priced at $13. Guests can pair their bloody marias with flavorful dishes like the Birria Chef Ramón, featuring tender oven-roasted beef marinated in guajillo chiles and herbs, served with a traditional sauce, Mexican-style rice, beans and hot tortillas; or the Tinga Poblana, slow-roasted pork cooked in California chiles, chipotle and tomato, garnished with guacamole and sour cream and served with rice, beans and tortillas.
