AQUA SEAFOOD & CAVIAR RESTAURANT BY MICHELIN-STARRED CHEF, SHAUN HERGATT, ANNOUNCES TWO NEW MENU OFFERINGS
From tourists to locals, Chef Shaun Hergatt’s west coast restaurant, located in Resorts World Las Vegas, can indulge in a new “Evening Kickoff” menu exclusively for hotel guests or enjoy multiple selections from their new dinner menu.
Originally from New York, with roots in Australia, Michelin-starred chef, Shaun Hergatt, comes from decades of culinary expertise which has expanded his work by becoming the Executive Chef and/or Owner for multiple restaurants in New York City and Las Vegas.
Launching this July at Aqua Seafood & Caviar Restaurant are two new menus: a multi-course “Evening Kickoff” menu dedicated specially to Resorts World hotel guests and a dinner menu with exciting additions to the Shellfish, Fish and Steak portions as well as a new “For Two” options. Evening Kickoff Menu for Resorts World guests:
This 3-course menu is priced at $85 per person, available from 4 – 6 PM, perfect for hotel guests to enjoy a meal before reveling in entertainment at the Resorts World Theatre. In addition to this menu, guests can also enjoy half off signature cocktails to pair with their courses and the option to indulge in Chef’s Choice Seasonal Oysters for an additional $10. Included on this menu are:
Starter
- Choice of Australian Caesar Salad or Crab Cake
Entrée
- Choice of Australian Wagyu Hangar Steak, Gnocchi or Spicy Fried Chicken
Dessert
- Caviar Ball Blackberry Cheesecake

- Maine 1/2 Lobster in the Shell served chilled with butter or aioli
- Shellfish Platter served with Raw Oysters, King Crab and Maine Lobster

- Chilean Sea Bass made with Potato Purée, Hon Shimeji Mushrooms and Chili Oil
- Red Snapper made with Corn Salsa, Baby Basil and Tomato Vinaigrette
Steak
- Prime Ribeye from Creekstone Farms
- Prime Filet from Creekstone Farms
- Wagyu Strip Loin from Master Selections, Australia
- Wagyu Tomahawk from Master Selections, Australia
For Two
- Butterfly Branzino made with Citrus Relish, Caper Brown Butter and Micro Greens
