Mott 32 Launches New Seasonal Menu for Spring and Summer

Mott 32, one of the most award-winning Chinese restaurant brands in the world is launching its spring and summer menu at The Venetian® Resort Las Vegas.

 

Mott 32 proudly represents modern Hong Kong and a new chapter of Chinese dining, highlighting various cooking techniques including Cantonese and Shanghainese. The spring and summer menu features some of the region’s most highly prized seasonal ingredients like asparagus, freshwater prawns, bitter gourd, and tea tree mushrooms, to name a few.

 

Some of the spring and summer dishes that have been added to the robust menu include:

  • Freshwater prawns served with asparagus, prawn roe and ginkgo nuts ($42), a dish that incorporates Cantonese and Shanghainese techniques and ingredients from their regions.
  • Garlic crab served with deep-fried mantou ($138), which takes inspiration from the Shunde region in China where wealthy families and high-ranking officials regularly enjoy this dish.
  • Wok-fried mala Angus beef with tea tree mushrooms and chili ($48), that fuses the flavors and cooking styles of the Canton and Szechuan regions with antioxidant-rich mushrooms and the tingling mala spice, which helps stimulate the appetite, especially through the summer heat.
  • Wok-fried whole lobster with crispy potatoes, salt and pepper ($78), prepared typhoon-shelter style, an iconic cooking style from Hong Kong.
  • Wok-fried bitter gourd with Iberico pork, preserved vegetables and vermicelli ($48), highlighting bitter gourd, a vegetable prized for its various health benefits often enjoyed by Cantonese people in summer to detox and reduce heat in the body, paving the way for smoother skin and a healthier complexion.

“One of my favorite dishes from the spring and summer menu is the freshwater prawns because they bring a delicate sweetness and elegance to the dish complemented by prawn roe that highlights notes of umami,” Mott 32 Las Vegas Executive Chef Alan Ji said. “The ginkgo nuts are full of antioxidants and terpenoids and have been known to be good for kidney health in Chinese culture.”

 

To complement the dishes, the talented Mott 32 bar team offers some refreshing and light cocktails for the season including:

  • It’s Five O’Clock in Hong Kong made with Beattie’s Potato Vodka, rose liqueur, lemon, orange sherbet, strawberry jam and orange bitters.
  • Secrets of Xi’an made with Johnnie Walker Black Label, Ming River Baijiu, green apple, miso honey and cucumber.
  • Floating Moon made with Milagro Silver tequila, Small Hands Foods Orgeat, lemon, watermelon and tapioca boba pearls.
