Le Café Central – the newest addition to the acclaimed Le Café du Vegas family – is slated to open this spring in Las Vegas’ Chinatown, bringing an elevated European café experience to the neighborhood. Following the success of Le Café du Val in Henderson and Le Café du Sud in Southern Highlands, this latest expansion will introduce the café brand’s signature pastries, breakfast and lunch selections to a new, centrally located audience. With the support of award-winning pastry chef Claude Escamilla, Le Café Central will also debut a weekend dinner service featuring “amuse bar and petites plates” – small bites and appetizer-style dishes from the French Riviera.
With a celebrated career spanning three decades, Escamilla has earned a reputation as a world-class pastry chef. A two-time World Pastry Champion and U.S. Pastry Champion, his career highlights include leading the pastry programs at Bellagio Las Vegas and ARIA Resort & Casino, earning national recognition for his culinary artistry. His latest venture at Le Café Central as partner, executive chef and director of operations will showcase his expertise and elevate the café’s culinary offerings.
By day, Le Café Central will serve an array of handcrafted authentic French and European flavors and offerings, including delicate galettes, artisanal sandwiches, fresh salads and an assortment of Viennoiseries – rich, sweet and pillowy pastries. Guests can also indulge in classic macarons, sweet and savory crepes and expertly brewed espresso-based drinks and teas, all crafted with high-quality ingredients.
On weekends in the evening, guests can also savor “amuse bar and petites plates,” a curated menu of refined small plates inspired by co-owner David Gazzano’s beloved hometown of Nice, France, and the surrounding Mediterranean region. Signature offerings will include socca and panisse, petits farcis, bouillabaisse and daube Niçoise. Visitors can also look forward to French classics such as foie gras and boudin noir. Each dish will be crafted to pair beautifully with a thoughtful selection of beer, wine and cocktails. Guests can enjoy their evening in a relaxed setting with live music enhancing the ambiance.
Renowned for their commitment to quality cuisine, warm hospitality and inviting ambiance, Gazzano and co-owner Carmen Barbur have earned a stellar reputation in the Las Vegas culinary scene. Since 2017, the duo has successfully built their café brand centered on high-quality cuisine, exceptional service and a sense of community, now elevating their vision with Le Café Central.
Gazzano brings more than 35 years of restaurant experience, having worked in Michelin-starred establishments across Europe and the U.S., including Dal Pescatore in Italy, Guy Savoy in France and Las Vegas and Nomad in Chicago. Barbur, originally from Romania, holds extensive experience in front-of-house operations with luxury hospitality brands such as Starwood, Hilton, Hyatt and The Little Nell, later transitioning into retail management with Prada, Dior and Van Cleef & Arpels.
