BELLAGIO UNVEILS NEW BRUNCH AND DINNER MENUS AT WOLFGANG PUCK’S SPAGO

Renowned for igniting Las Vegas’ dining scene into the culinary epicenter it is today, celebrity chef Wolfgang Puck continues to innovate with the debut of new brunch and dinner menus at his flagship restaurant, Spago at Bellagio Resort & Casino. The fresh take on elevated culinary presentations includes handmade pastas, all-natural meats and specialty seafoods as the stars of the show, with each dish skillfully created using seasonal ingredients and precise cooking techniques for which Puck is known.

 

“Spago has been a driving force for creative ingenuity since its inception and I continue to stay true to my philosophy of transforming the expected into something entirely new for my guests,” said Chef Puck. “Each market-driven dish we’ve created is inspired by different cultures and culinary viewpoints, resulting in unexpected dining experiences that deliver the best quality, taste, and presentation season after season.”

The Menu

A nod to California’s multicultural dining scene, Spago’s new menus focus on locally sourced ingredients; European and Asian flavors and techniques; and a fusion of tastes and aromas that excite the senses.

Dinner menu highlights include:

  • MARYLAND BLUE CRAB CAKES – This classic seafood delicacy features tender pieces of crab meat, prepared to perfection. A rich and creamy basil pesto aioli and colorful medley of tomato-red pepper relish accompanies the dish.
  • WOOD OVEN ROASTED CRYSTAL BLUE PRAWNS – Delicate prawns are toasted in a wood-fired oven to enhance the natural sweetness, while also adding a subtle smoky flavor. Calabrian chili butter, parsley and lemon are lightly poured over the prawns and served with a side of ciabatta toast.
  • HAND-CUT FETTUCCINE PASTA – The handmade fettuccine pasta incorporates earthy ingredients such as freshly foraged mushrooms, shallots and parsley to create a simple, yet elevated Italian classic.
  • PAN SEARED MAINE DIVER SCALLOPS – A celebration of seasonal ingredients, the hand-harvested scallops are beautifully complemented with sweet corn, shishito pepper and smoked sun gold tomato sugo.
  • WOOD GRILLED PORK CHOP – A flavorful, hearty dish incorporating Korean-inspired flavors such as daikon radish kimchi, charred caulilini and gochujang jus.

Weekend brunch highlights include:

  • GULF SHRIMP CEVICHE TOSTADA – A vibrant and refreshing appetizer featuring gulf shrimp with Haas avocado, lime and red onion, served on a golden tostada and topped with cilantro.
  • PROSCIUTTO DI PARMA & CALIFORNIA HEIRLOOM MELON SALAD – A perfect combination of ingredients featuring the delightful Italian staple, prosciutto di Parma, with arugula, heirloom tomatoes and a drizzle of aged balsamic.
  • POACHED ORGANIC EGGS– A delicious and popular specialty, this dish is elegant in its simplicity. The poached organic eggs are served with house smoked salmon, buttered asparagus and hollandaise sauce.
  • CRISP LIBERTY FARM DUCK CONFIT – A fusion of rich, traditional French techniques, the liberty duck confit features Vietnamese flavors with vermicelli noodles, cucumber, cilantro, peanuts and Vietnamese dressing.
  • SPECIALTY COCKTAILS – An assortment of refreshing libations to accompany any signature Puck culinary creation.
    • Peach Bellini – Prosecco and white peach puree
    • Blood Orange Bellini – Prosecco and blood orange puree
    • Spicy Lychee Martini – Vodka, lime juice, simple syrup, lychee puree and jalapeño
    • Espresso Martini – Vanilla vodka and Kahlúa
    • Sangria Tree (Red or White) – Vodka, orange juice and market fruit

  • Friday through Sunday
    • Brunch: 11 a.m. – 2:30 p.m.
