 Step into a world where style meets flavor at Amaya Modern Mexican Restaurant, set to open this January at The Cosmopolitan of Las Vegas. The cutting-edge dining destination will fuse captivating energy with the coastal flavors and bold spices of Mexico, capturing the vibrant spirit of Tulum.

 

Created by acclaimed Michelin-starred chef Jason McLeod, the menu reimagines modern Mexican cuisine, featuring dishes such as the 2 lb. Whole Lobster paired with chili lobster cream sauce and drizzled with lime; Birria Short Rib, slow-cooked and served with corn puree, pickled onion and cotija cheese; and a show-stopping Fajita Board that captivates the senses from presentation to palate. Other signature dishes include citrusy ceviche, zesty aguachile, fiery tiradito and irresistible lobster enchiladas. Dinner at Amaya will be an electrifying celebration, with the pulsating beats of DJs and other mesmerizing performances and entertainment, inviting guests to dance in their seats and embrace the carefree spirit of the night. 

 

Amaya’s cocktail menu will be a showcase of bold, creative cocktails that push the boundaries of flavor and crafted for those with a taste for the extraordinary. Offerings will include:

  • Flor de Paloma, an elevated creation with reposado tequila, pink grapefruit, lime, and agave syrup, crowned with hibiscus foam and delicate edible flowers. 
  • Fuego @Volcán, a mixture of mezcal, passion fruit and blood orange, with a hint of ancho chili syrup and a spicy Tajín rim for a bold taste
  • Desert Mirage delivers a blend of sweet and spice, balancing guava, hibiscus, ginger and Serrano chili syrup, topped with ginger ale and bitters. 
  • Birds of Paradise, a vibrant fusion of blackberry syrup, pineapple and passion fruit, paired with either mezcal or reposado tequila, and finished with a striking black salt garnish. 

 

Amaya’s signature cocktails include modern twists on classics, such as the mezcal-infused Old Fashioned, served beneath a fragrant cloud of rosemary, and the Noche Oscura, a redefined espresso martini with mezcal, coffee liqueur, Mexican cacao bitters, and a creamy foam that balances bitter, sweet, earthy, and smoky flavors in every sip. The beverage program also will include a catador (tequila expert) to oversee the meticulously curated selection of smooth, aged tequilas and complex mezcals, taking guests on an immersive journey through the rich, multi-generational heritage of Jalisco. 

 

Designed by the uber-talented Peter Max Bowden and team at Petermax Co., Amaya will welcome guests to an ambiance inspired by the rustic elegance and lush, tree-canopied tropics of the Yucatán Peninsula. The design artfully blends intimate alcoves with social spaces, creating a refined yet evocative setting that transports diners to a sophisticated beachside retreat. Spanning 7,180 square feet across a dining room, bar and lounge, Amaya will be located on the 2nd floor of The Cosmopolitan of Las Vegas.
