Joël Robuchon Restaurant Reveals Luxurious New Tasting Menu
Tantalize Taste Buds this Spring with 18-Course Menu
Joël Robuchon Restaurant at MGM Grand Hotel & Casino has introduced a groundbreaking new menu that combines both modernism and tradition within luxury dining. First presented at Robuchon’s restaurant in Bordeaux, France, the 18-course menu is now available in Las Vegas, offering a once-in-a-lifetime opportunity for guests to indulge in the Chef of the Century’s exquisite cuisine. Executive Chef Claude Le-Tohic and Executive Pastry Chef Salvatore Martone work together to ensure there is a flawless delivery with each culinary presentation.
“This is one of the greatest menus I have ever created,” said Chef of the Century Joël Robuchon. “There are many details involved in preparing each service along with an extremely high skill level required to execute this experience. I am grateful to work with a talented, passionate team that puts their heart into making these masterpieces every night.”
Guests are first presented with four “services,” each consisting of three small, savory plates including:
1st Service
- La Salade de Pomme de Terre
Carpaccio of foie gras and potatoes covered with black truffle shavings - Le Saumon
Scottish salmon confit coated with Osetra caviar and a wasabi cream - Le Homard
Main lobster in a thinly sliced turnip with sweet and sour dressing
2nd Service
- Le Truffe
Black truffle tart with confit onions and smoked bacon - L’Œuf de caille miroir
Pan fried egg with pearl rice and black truffle - Les Cuisses de Grenouille
Frog leg fritters with garlic purée and parsley coulis
3rd Service
- La Langoustine
Truffled langostine ravioli with simmered green cabbage - La Noix de Saint-Jacques
Seared diver sea scallop served with kumquat and caviar - La Soupe Folichonne
Medley of aromatic herbs in an exotic broth
4th Service
- L’Oursin
Sea urchin atop a purée of fennel and potato with citrus jus - Le Black Cod
Caramelized black cod in a Malabar black pepper sauce with pak choy - La Langouste
Spiny lobster grilled with a green curry jus and fresh coriander
Following these introductory offerings, a traditional main course and a selection of desserts is served. The main course stays true to Joël Robuchon Restaurant’s excellence and precision as a carving station is prepared before the table. The course features Châteaubriand beef, topped with foie gras and rolled in black truffles with a Porto sauce, while complemented by the legendary purée de pomme de terre (Robuchon’s famous mashed potatoes). Throughout dinner, guests will enjoy the restaurant’s beloved bread trolley as well as the mignardises trolley, featuring more than 40 types of decadent petits fours and chocolates. In its entirety, the experience is comprised of 18 carefully crafted dishes accompanied by exceptional service and presentation.
This very special tasting menu is available for $445 per person. Upon request, wine pairings are available and will be selected by Joël Robuchon Restaurant Wine Director William Moss for an additional cost.
