ABOUT JALEO LAS VEGAS:
José Andrés Group’s Jaleo Las Vegas outpost is reimagined to include the excitement and spectacle of the world-famous Vegas Strip. The centerpiece is the paella pit, an open-fire wood grill specially designed to cook paella in the authentic Spanish way and one of only three in the world. Interior design takes inspiration from the rich culture of Spain and features handcrafted embroidery resembling a mantilla, an art installation that juxtaposes wood patterning against imagery of the Spanish countryside, and doors that are inscribed with the names of popular tapas. The menu features all of the traditional classics, bringing the spirit and flavors of Spain to the heart of Las Vegas including an extensive menu of tapas and entrees, as well as an innovative bar program boasting curated cocktails, sangrias, and Spanish wines. Jaleo celebrates the rich regional diversity of Spain through traditional and contemporary cuisine. It’s tradition and whimsy, all in one bite. Jaleo is open for dinner service Sunday – Thursday from 5 – 10 p.m.; Friday and Saturday from 5 – 11 p.m. and is located within The Cosmopolitan of Las Vegas, 3708 Las Vegas Boulevard South Boulevard Tower, Level 3.
