Pancho’s Mexican Restaurant, the vibrant Mexican hacienda in Downtown Summerlin, serves beer-battered fish tacos, featuring crispy Mahi-Mahi in corn tortillas topped with shredded cabbage, pico de gallo and chipotle sour cream, accompanied by Mexican-style rice and beans for $23.95. Guests can complement the dish with a handcrafted margarita or a cold Mexican beer from the Cantina, which offers more than 40 tequilas and signature cocktails. For those celebrating Dry January, Pancho’s will also be mixing up non-alcoholic versions of its beloved margaritas for $8 and a non-alcohol paloma for $9. The restaurant is open daily from 11 a.m. to 9 p.m., offering a festive setting for an authentic dining experience.
Borracha Mexican Cantina at Green Valley Ranch in Henderson blends flavorful Mexican cuisine with handcrafted cocktails in a vibrant, Día de los Muertos-inspired setting.
