AYYA Hospitality Group Concept to Deliver Vibrant Cuisine and Inventive Cocktail Program Inspired by Flavors of Mexico

AYYA Hospitality Group is debuting Siempre, J.B., Las Vegas’ haute Mexican restaurant on Wednesday, July 3. Opening within UnCommons located just off S. Durango and 215 in a lively and contemporary setting, Siempre is a culinary journey inspired by the best flavors and culinary traditions across multiple regions of Mexico. The newest restaurant to hit the Southwest Las Vegas dining scene will feature everything from gourmet street food to indulgent classics, inventive margaritas and an in-house aguas frescas program, as well as exclusive tequila experiences guests cannot find anywhere else.

Siempre’s culinary vision is spearheaded by AYYA Hospitality’s Head of Food and Beverage Chef Min Kim and Siempre’s Chef de Cuisine Román Andrés. Growing up in Puebla, Mexico, Chef Andrés began his culinary career in Las Vegas in 2016 working with Daniel Boulud and continued with notable Las Vegas destinations including Hell’s Kitchen, Alexxa’s and The Black Sheep. Bringing a wealth of knowledge of the country’s culinary innovation, Chef Andrés is dedicated to highlighting the rich tapestry of contemporary Mexican cuisine.

“It’s our goal for Siempre to reflect the lively adventures our team experienced on our travels throughout Mexico,” said AYYA Hospitality Group Partner Lowell Raven. “We hope guests will bring their own band of banditos, taste our culinary creativity with every bite, and create memories that will become unforgettable tales.”

A glimpse into Siempre:

  • Menu: Siempre’s menu is a celebration of the unique culinary traditions, cocktails and drinks from multiple regions of Mexico, with special emphasis on Puebla, Mexico City, Oaxaca, Jalisco and coastal regions. An homage to the lively and vibrant flavors quintessential to cuisine in these areas, Siempre will take guests on a culinary journey from the desert to the sea with its collection of steak, seafood, ceviches and more. The menu will highlight a signature Mole, made from a recipe with authentic ingredients passed down from Chef Andrés’ mother, rich in flavor and rooted in tradition.
  • Cocktail Program: Created in collaboration with top Las Vegas mixologists, Siempre’s cocktail program is a creative display of showstopping ways to feature mezcal, tequila, sotol and scotch within the framework of Mexican beverage lore. A margarita program consisting of six speciality margaritas will come to life with house-made, fresh squeezed juices. Additionally, Siempre will launch partnerships with notable tequila brands to bring exclusive tequilas and innovative promotions to Las Vegas guests.
  • Authentic Mexican Beverage Program: In addition to carrying its own collection of Mexican Coke and Sprite consisting of natural sugars, Siempre will offer an in-depth aguas frescas program. Made in-house, Siempre’s aguas frescas will showcase refreshing, unfiltered fruit juices available in four flavors: hibiscus, cucumber, melon and horchata.
  • Design: Designed by AYYA Hospitality Group lead designer, Diana Sin, Siempre’s scene is set by an earthy desert palette and modernist details throughout the space. Luxurious booths fill the restaurant and art, pots and fixtures imported from Mexico complete the rustic design. Siempre features an outside patio, 20-seat bar and private dining room for up to 12 guests. A desert lair crafted for those in search of a private hideout for their band of banditos, Siempre’s private dining room is complete with two-way mirrors, a hand-painted map of Mexico and one-of-a-kind table designed with authentic belts and shredded pesos.

Siempre is located on the southwest corner of UnCommons at 6887 Helen Toland St. #105, Las Vegas, Nevada 89113. Siempre is AYYA Hospitality’s fifth Las Vegas concept joining Pine Bistro, Crust & Roux, Thick & Thin Treat Bar and IVI Performance.
