Downtown Las Vegas Food Truck to Celebrate with Bottle-Service-Style “Hogstravaganza” Platter
Downtown Las Vegas will go hog wild for St. Paddy’s Day as Carolina barbecue food truck Project BBQ at Circa Resort & Casino debuts green whole roasted hogs – along with traditional corned beef sandwiches and tacos with festive green tortillas – March 17.
A Vegas-bottle-service twist on a whole roasted pig, Project BBQ’s St Patrick’s Day “Hogstravaganza” platter will offer its fair share of photo-worthy moments for hungry patrons. The presentation includes an entire roasted green pig paired with a bevy of sides and wheeled out in true Vegas fashion with sparklers, party horns and loud music.
“We love St. Patrick’s Day. It’s our favorite holiday and we wanted to make sure our first one at Circa was over the top,” said Chef Rex Bernales, executive chef of Project BBQ. “People come to Vegas for experiences they can’t have anywhere else. The St. Patrick’s Day Hogstravaganza is our way of bringing both the Vegas spectacle and the party downtown.”
The Hogstravaganza can be devoured right in front of Project BBQ – Fremont Street Experience’s first permanent food truck – which recreates a backyard patio vibe beneath the 16.4 million-pixel Viva Vision light show. It also can be delivered straight to tables in the world’s largest sportsbook inside of Circa. The Hogstravaganza platter must be ordered in advance of March 17.
Project BBQ’s St. Patrick’s Day fun won’t stop with the whole hog. They also will be serving up traditional corned beef sandwiches, as well as festive tacos with green tortillas. To accompany the food, guests can grab drinks from the neighboring Circa Bar, offering 24 varieties of frozen drinks served by the downtown’s famous Dancing and Flair Bartenders.
Helmed by Chef Bernales and created in collaboration with his partners Rob Baker, Mo Pierce and Steve Hamlin, Project BBQ uses Carolina-style brisket, pork and chicken to create mouthwatering dishes such as tacos, sandwiches, empanadas and more. Guests can get the full Project BBQ experience with the two-foot-long Hundred Dollar Sandwich, piled high with meat and smothered in BBQ sauce, beer and cheese sauce, bacon bits and mounds of Project Chips; or the Garbage Bowl, which includes Project Chips slammed with brisket, pulled pork, barbecue chicken, and topped with all of Project BBQ’s signature sauces, crispy bason and Truck Slaw.
