Pancho’s Mexican Restaurant, located in Downtown Summerlin, will offer a green enchilada, themed for the holiday, only available for St. Patrick’s Day on Tuesday, March 17.

The all-green “St. Pancho’s Enchilada” will be made with a corn tortilla, filled and rolled with sautéed artichoke hearts and avocado, topped with green roasted tomatillo sauce and cotija cheese and served on a bed of sautéed spinach. The dish will be served with a side of green rice and beans. The “St. Pancho’s Enchilada” will be priced at $19.95.

 

Pancho’s will also offer happy hour in the cantina from 2 – 7 p.m. Drink specials include $3 off house and flavored margaritas, $3 off well cocktails and $3 off house wines.
