EXECUTIVE CHEF MARK LORUSSO TAKES THE HELM AT WYNN LAS VEGAS’ AWARD-WINNING SW STEAKHOUSE

The esteemed chef introduces more than a dozen dishes with a focus on seasonal ingredients

This season, Executive Chef Mark LoRusso debuts a variety of new seasonal menu items and updated twists on signature dishes at Wynn Las Vegas’ award-winning SW Steakhouse. Nestled on the iconic Lake of Dreams, guests can indulge in the creative new menu amidst views of the shimmering lake, pine-topped mountains, and a coursing waterfall.

 

With a revamped menu from newly appointed Executive Chef Mark LoRusso, imaginative desserts from Pastry Chef Michael Outlaw, and a refreshed cocktail selection from resort mixologist Mariena Mercer Boarini, SW Steakhouse ushers in a new era of steakhouse offerings with an emphasis on seasonal ingredients.

 

“When I took over at SW Steakhouse, my goal was to incorporate a fresh approach to the menu, which we’ve done by introducing more than a dozen seasonal dishes as well as frequent Chef Specials,” says LoRusso. “I also worked to enhance some of the signature dishes and classic flavors already beloved by our guests.”

This season’s menu highlights include:

  • Starters – Maine Lobster Bisque featuring Yukon potatoes, tarragon, and focaccia croutons that is poured tableside; Seafood Spectacular tower featuring Maine lobster, king crab legs, jumbo shrimp, oysters, and crab cocktail
  • MainsPan Roasted Sea Scallops with porcini and butternut squash risotto and black truffle sauce; 22 oz. double cut Pepper Crusted Chateaubriand with sides of Fire and Ice Heirloom Carrots & Au Gratin Potatoes
  • Seasonal DessertsApple Delight a spiced apple galette with apple butter, sour cream ice cream; First Leaf of Fall Cheesecake a New York-style cheesecake, with spiced sponge cake and pumpkin-spiced ganache

SW Steakhouse now offers unique, daily Chef Specials which are developed based on what is available from suppliers, including special catches from the restaurant’s seafood purveyors in the Mediterranean.

 

Pastry Chef Michael Outlaw believes every great steakhouse meal deserves a fitting finale. “I want our guests to feel the same excitement they did when they were kids eyeing a spectacular dessert,” says Outlaw. Outlaw’s passion for creating delectable desserts inspires him to create new seasonal offerings like the First Leaf of Fall Cheesecake, in addition to the selection of show-stopping favorites including SW’s signature Funnel Cake with Strawberries and more.

 

Matching the timelessness of the dishes on the menu are the new signature cocktails from resort mixologist Mariena Mercier Boarini. Guests can imbibe in classics with a twist such as Dark Side of the Moon, a seasonal whiskey sour with Maker’s Mark Wynn Signature Barrel Bourbon, pomegranate hibiscus-spiced apple cider and citrus; Fast Lane espresso martini made with Absolut Elyx Vodka, Kahlua, Licor 43 Vegan Horchata and Madagascar vanilla liqueurs, pumpkin spice and espresso; and guest favorite The Midas Touch featuring Whistlepig 10 Year Rye, coconut chai spices, angostura bitters garnished with a new SW Mini Gold Bar made of Guanaja Valrhona 70% chocolate, Whistlepig Whiskey-infused caramel and praline.
