Reservations now available at highly anticipated, limited engagement restaurant concept from celebrity chefs Michael and Bryan Voltaggio

Retro by Voltaggio, the first Las Vegas restaurant from TV stars, judges and renowned chefs Michael and Bryan Voltaggio, is now accepting reservations for its May 3 debut at Mandalay Bay Resort and Casino. Conceptualized by the famed chef duo, the one-year culinary residency experience will celebrate the best of the 80s and 90s with the brothers’ modernized take on classic American dishes served in an environment with playful and nostalgic nods to the era.

“My brother and I came of age in the 80s and 90s and we want Retro to reflect that time with vintage flavors and style brought to life in a modern way,” said Michael Voltaggio. “From the food and the dishware to the art and music, we are inviting everyone to join us in fondly remembering the radical sights, sounds and fun of those years.”

 

Bryan Voltaggio said, “It has been our goal to open a restaurant in Las Vegas for many years, and to see it start to all come together in such an exciting way has been a dream come true. We are honored to join the incredible roster of chefs and restaurants at Mandalay Bay and to continue delivering first-class dining experiences to the resort’s valued guests and visitors.”

Retro’s hours of operation will be Monday – Saturday, 4 p.m. – 10 p.m. and reservations can be made by visiting Mandalay Bay online. The restaurant will be located in the former Aureole space, which will close after service on April 14.

The creativity, dedication and energy they have shown in creating the vision for Retro will show in every element of the guest experience. Retro guests will have the opportunity to explore the brothers’ elevated takes on nostalgic “snacks,” such as Pepperoni Rolls featuring San Marzano marinara, basil and Stracciatella; Chicken Pot Pie Fritters handmade with a buttery cracker crust, pea leaves and lemon; and Deviled Eggs topped with sturgeon caviar. Shareable plates will include the Wagyu Beef Pot Roast served with beef fat potatoes and nantes carrots; Smoked Fish Dip made with smoked trout, fennel and radish and served with a side of sea saltines; and Michael and Bryan’s “Voltaggi O’s,” a twist on the canned childhood favorite, creatively prepared with anellini pasta, tomato gravy and a giant meatball.

ABOUT CHEFS MICHAEL AND BRYAN VOLTAGGIO

Natives of Frederick, MD, chefs Bryan and Michael Voltaggio are known for their creativity in the kitchen and their family-first attitude when it comes to cooking. The brothers became famous when their sibling rivalry caught attention on the Emmy award-winning seasons of Bravo’s Top Chef.
