Pumpkin is synonymous with fall and Alizé’s Chef de Cuisine Mark Purdy has created a delightful twist on his Parisian gnocchi to incorporate this autumn favorite. Available throughout the fall season and into early winter, pumpkin gnocchi is sautéed in clarified butter and also served with the sauce along with sage espuma.
“Our intention is to provide a very simple dish that would deliver robust fall flavors without being overwrought with garnishes and details,” says Chef Purdy. “It is a simple blend of pumpkin and sage flavors with a pleasing range of textures on the palate; the soft gnocchi, the crispy crust of the gnocchi, the foamy espuma sauce, and the crunchy fried sage leaves.”
