Emeril’s New Orleans Fish House in the MGM Grand Hotel & Casino has launched a $65 four-course spring tasting menu showcasing the restaurant’s signature and new dishes featuring seasonal ingredients.

While all menu items are subject to change based on seasonality and availability of ingredients, first and second options could include tuna poke with yellowfin tuna, spicy soy, ginger and nori seaweed served with Taro chips; deviled potatoes with horseradish cream, house cured salmon egg mousse and ghost pepper Cajun caviar; San Juan Island pink scallops with housemade sausage, shaved asparagus, squid ink pasta and saffron cream; and Emeril’s signature BBQ shrimp served with a rosemary biscuit and shaved chives.

Entree selections could include grilled petite filet with smashed roasted root vegetables; pan-fried rainbow trout with jumbo lump crab; and crispy skin-on shrimp with soba noodles, spicy maple bacon and smoked citrus shoyu glaze.

Three dessert selections round out the menu, including pecan pie, Emeril’s banana cream pie or a three cheese plate.

This menu is available during dinner service from 4-10 p.m. with optional wine pairings starting at $30 per person. Each wine pairing is personally selected by sommelier Sean Morgan to complement the flavors of each course.

About Emeril Lagasse
Chef Emeril Lagasse is the chef/proprietor of 12 restaurants in New Orleans, Las Vegas, Orlando, Miramar Beach, FL and Bethlehem, PA. In 2016, Lagasse opened Emeril’s Fish House, making this the third restaurant by Emeril at the Sands Bethlehem. Lagasse’s 11th restaurant, Meril, opened in New Orleans in September 2016. Most recently he opened his 12th restaurant, Emeril’s Coastal Italian, in Miramar Beach, Florida. As a national TV personality, he has hosted more than 2,000 shows on the Food Network, and is the food correspondent for ABC’s “Good Morning America.” Most recently, Amazon launched an original series featuring Lagasse called Eat the Worldwith Emeril Lagasse. The series received five daytime Emmy nominations and won Outstanding Culinary Program. The series was also a James Beard semifinalist in the category Outstanding Personality of Host. Lagasse has appeared as a guest judge in four seasons of Bravo’s hit food series, “Top Chef,” was named a co-host on the 10th season of the “Rachael Ray Show.” He is the bestselling author of 19 cookbooks, the latest titled Essential Emeril: Favorite Recipes and Hard-Won Wisdom from My Life in the Kitchen.
