Chef Sam Marvin, Owner and Executive Chef of Echo & Rig Steakhouse, will give back to the community during Restaurant Week at both locations in Tivoli Village and The District at Green Valley Ranch.

Three Square Food Bank’s anticipated Las Vegas Restaurant Week is until June 16, 2023. Chef Sam will showcase his two venues and menus, displaying his culinary arts while giving back to food-insecure residents across the valley.

Echo & Rig Summerlin and  Henderson will offer lunch for $30 at both locations. The first course is a choice of Thick Cut Bacon with house barbecue sauce or Chilled Tomato Cucumber Gazpacho. The second course is a choice of Bibb Salad (lettuce, herbs, radicchio, candied walnuts, blue cheese, and creamy balsamic vinaigrette) or Caesar Salad (romaine hearts, parmesan Reggiano pulled sourdough croutons or classic Caesar dressing). The third course is a choice of Ribeye Steak Sandwich (bloomsdale spinach, bearnaise aioli, and garlic) or Ahi Tuna Frites (seared rare, wilted greens, shoestring fries, and ponzu sauce). Father’s Day is Sunday, June 18, and Echo & Rig will honor all dads with a special collaboration on Father’s Day Weekend (June 16-18) with Uncle Nearest Premium Whiskey, enjoying exclusive drinks and supporting Three Square. Along with dinner and drinks, The Echo & Rig Butcher Shop pays homage to meat by featuring one of the most acclaimed butchers in the country, a large open glass meat locker, vertical displays, and an exhibition/demonstration area.

“The custom grill area will include a wood-fired oven, a charcoal smoker, and two wood-fire grills with grates that can be raised or lowered,” explains Chef Sam. “The grills will be fueled with red oak burning with the flavor of fire.”

The name Echo & Rig combines femininity and masculinity in its story. Echo honors the nymph who masterfully distracted the queen for Zeus, though was ultimately caught and made only to repeat. Rig showcases the power of mankind. While this is an abstract story, Chef Sam interprets it with the pairing of cuts of steaks sourced from purpose-driven farming partners from around the world, including Cape Grim in Tasmania and Creek Stone in Kansas.
