Diablo’s Cantina Brings the Heat to Luxor
Luxor Hotel and Casino spices up the resort’s food and beverage program with the addition of Diablo’s Cantina, opening December 20. At Diablo’s, guests will be invited to ignite their taste buds with tantalizing appetizers, wickedly tasty entrees, delicious desserts and tangy cocktails.
The robust menu, created by Executive Chef Saul Ortiz, will boast vibrant Mexican fare deeply rooted in the culture and traditions of Mexico City, the country’s capital. From starters to sides, each dish balances rich flavors with modern cooking techniques and detailed presentations to provide guests time-honored, south of the border favorites in an approachable way.
“My cooking style is heavily inspired by the produce and street food of Mexico City, my hometown,” said Ortiz. “The menu features a collection of the city’s popular dishes and showcases a modern approach to authentic Mexican cuisine by preparing traditional ingredients using contemporary methods.”

Spicy Starters
Agua Chile Shrimp Ceviche: Citrus-cured shrimp mixed with cucumber, pickled onions, orange, cilantro and Fresno Chili peppers; served with tortilla chips
Diablo’s Salsa Tasting: A tasting of three increasingly spicy house-made salsas including a mild tomatillo and jalapeno mix; medium tomato and chipotle blend; and a tingling combination of roasted tomatoes and Carolina Reaper, the world’s hottest pepper

Enchilada Trio: Platter of three enchiladas with mouth-watering fillings and sauces including slow-roasted beef brisket topped with a zesty pasilla sauce; chicken tinga and cheese coated with a chipotle tomato sauce; and shrimp sautéed in a garlic butter sauce, finished with a tomatillo crema and cabbage slaw
Combination Fajitas: Sizzling skillet of Achiote-marinated steak, Adobo chicken and citrus shrimp with bell peppers, red onions and yellow squash
Sinful Sweets
Fried Platano Split: Fried, hand-pressed plantain coated with sugar, topped with cinnamon ice cream and berry compote and drizzled with condensed milk, chocolate and cajeta
Churro Funnel Cake a la Mode: Churro funnel cake complete with cinnamon ice cream, strawberry marmalade and Nutella
Satisfying Sips
To complement the flavorful bites, guests can choose from a collection of premium tequilas and handcrafted margaritas such as The Vixen, made with blanco tequila, fresh-squeezed lime juice, hibiscus and mint; or El Gordo, a classic margarita served frozen in a souvenir cup. Additional specialty drinks include the Bubbly Citrus Mojito, a citrus rum with elderflower and lime muddled with mint and topped with prosecco; and the Forever Summer Sangria, red wine with orange liqueur, lemon-lime soda and seasonal fruit.
Fans of Diablo’s will recognize the abstract sombrero sculpture which remains the focal point of the venue, while a color palette of red, purple and green, along with colorful sugar skull murals and updated fixtures, transforms the room into a vibrant dining space. Large parties can be hosted in the private dining room, which seats up to 60 guests.
Diablo’s Cantina will be located on Luxor’s Mezzanine Level, in the former Tacos & Tequila space.
