Chef’s Roma Kitchen Introduces New Brunch Menu on Easter
Chef Ricardo Romo crafts new dining delights in Henderson
Chef Ricardo Romo will introduce his new brunch menu to the off-Strip restaurant Chef’s Roma Kitchen at McDonald’s Highlands in Henderson. Guests can enjoy these culinary delights beginning on Sunday (Easter), April 9, from 10 a.m. to 2 p.m.
“We all love brunch, and Easter will be the best day to introduce our version of this beloved meal,” says Chef Ricardo. “I look forward to introducing my flair to our guest’s favorite dishes.”
Breakfast dishes delight with French Toast covered with orange creamsicle cream and topped with bourbon maple syrup. The chef features Eggs Bennie served on ciabatta and topped with prosciutto, pesto, and pink sauce. The vegetarian choice includes Veggie Frittata combining eggs, vegetables, and arugula. Cacio E Pepe with bacon and egg rounds out the breakfast dishes.
For those ready to start their delectable brunch, they can start with appetizers, including Calamari (served with spicy Pomodoro), Shrimp Scampi (butter and white Wine), and Clams (red or white). Salads included Caprese (burrata, mozzarella, heirloom tomatoes, basil, olive oil, balsamic dressing), Avocado & Bacon Salad (field greens, tomatoes, cucumbers, vinaigrette dressing), and Caesar (romaine, Parmigiano, house dressing).
To dine on lunch delights, Francese made with an egg, lemon, butter, and chicken; NY Steak & Eggs (Black Angus, potato hash); or Salmon (red pepper, arugula, veggies).
Its cocktail program includes innovative drinks such as Smoked Buffalo Trace Old Fashioned blended with bourbon, simple syrup, bitters, cherries, and orange peel. Martinis and other classic cocktails are also available. A full bar with mimosas, a diverse wine list, and craft beers will quench any thirst.
Brunch hours on Sunday are 10 a.m. to 2 p.m. Dinner hours are from 4 to 9:30 p.m. Friday and Saturday from 4 to 9:30 p.m. and 4 to 9 p.m. Tuesday to Thursday and closed on Mondays. Chef Ricardo Roma is the new chef at Chef Roma Kitchen. Before moving to Las Vegas, he
started his culinary career at Tsunami on Martha’s Vineyard. Then, the executive chef worked
his magic at Michael Mina’s Seablue, formerly at the MGM Grand and STK at the Cosmopolitan
of Las Vegas. In 2014, he joined Corner Bar Management Group and created the menus for
Whist Stove & Spirits and Due & Proper before moving on to Itsy Bitsy Ramen and Whiskey,
