As Labor Day weekend, the unofficial end of summer nears, chef Sam Marvin invites you to join him as he throws open the doors and welcomes his first guests at the beautifully designed Echo & Rig Butcher and Steakhouse in Tivoli Village on Friday, Aug. 30th. Just in time to help families enjoy a relaxing meal together at the restaurant or visit the spectacular new butcher shop to select the ideal cut of meat for grilling, the Labor Day holiday weekend opening is ideal timing. Boasting an impressive menu of more than 90 items, a remarkable butcher shop showcasing high quality meats and a skillful butcher who can readily recommend the perfect cuts and cooking methods, Echo & Rig is poised to be a favorite destination and experience – not just a place for the best meal in town.
Imagined under acclaimed chef and restaurateur Sam Marvin’s meticulous watch, guests will immediately discover that Echo & Rig is something exceptional. Designed by noted interior designer Carolyn Baylon, floor-to-ceiling showcase windows immerse the eatery with natural light and provide a view directly into the Butcher Shop and to the open concept, two-floor eatery with a balcony overlooking the picturesque scenery. Baylon’s affinity for combining and mixing elements to create timeless environments is evident throughout the impressive 12,500 square foot space.
Echo & Rig Butcher and Steakhouse features an eclectic menu of urban grill-meets-traditional steakhouse in an open dining room complete with an exhibition kitchen, proprietary spices and rubs, a classic cocktail menu with new farm-to-glass twists, the freshest seafood and is the only restaurant with its own namesake butcher shop. Serving breakfast, lunch, dinner, a weekend brunch and late night menu, Echo & Rig Butcher and Steakhouse is the perfect spot to enjoy a meal and select something exquisite to cook up at home the next day.

Echo & Rig Butcher and Steakhouse is open Sunday through Thursday from 9 a.m. – 11 p.m. and from 9 a.m. – 2 a.m. Friday and Saturday with a special late night menu. A lavish brunch is available Saturday and Sunday from 9 a.m. – 3 p.m., inviting guests to relax and enjoy the true art of dining with friends and family while indulging in great food and quality time together.
Echo & Rig Butcher and Steakhouse is located in Tivoli Village in Las Vegas at 440 S. Rampart Blvd. Drive-up parking is available for the Butcher Shop and Self or Valet Parking is available. Private events of varying sizes are welcome in the main dining room or the picturesque outdoor patios located on the first and second floors.
