Caspian’s much-anticipated reveal arrives
just in time for a rockin’ New Year’s Eve party.

 

Caspian’s Cocktails & Caviar at Caesars PalaceClique Hospitalitys highly anticipated caviar bar and live music speakeasy, will officially open its doors on Friday, Dec. 20, just in time to host a rockin’ New Year’s Eve celebration on Tuesday, Dec. 31. The party will feature a high-energy night of live rock, bold cocktails and an electric atmosphere that will continue long after midnight. With its intimate, rebellious vibe, Caspian’s will be the home of ‘rock and roe’ with live rock music performances in the speakeasy Tuesday through Saturday and Caviar Karaoke on Thursday with a live band. New Year’s Eve will crank up the energy with live performances by Indie Florentino, blending classic anthems, modern beats and crowd-pumping energy, paired with indulgent bites and crafted cocktails for an unforgettable welcome to 2025.

 

The celebration will also include rock-inspired cocktails like the Electric Apple,  a vibrant mix of vodka, Midori, fresh squeezed green apple juice, lime, citrus tonic and honey; and the Midnight Bloom, a hibiscus-infused gin libation with Meyer lemon juice, Solerno, orgeat and prosecco. For those looking to amp up the VIP vibes, table reservations are available, along with exclusive drink packages for anyone ready to party like legends.

Caspian’s caviar bar will also flip the script with a lineup of flavorful caviar bites that scream rockstar swagger. Revelers can bite into the crabby caviar tacos, packed with Kaluga caviar, blue crab, dill chimichurri and pickled red onion; mini Maine lobster rolls, with Maine lobster salad, caviar and lemon on a buttery brioche; or oysters on the half served with caviar bumps, available by the half or whole dozen. To take the evening to the next level, guests can go over the top with one the menu pairings from Caspian’s daily caviar menu such as “The Whale,” two ounces of Imperial Golden Osetra caviar complemented by a bottle of Dom Perignon; and “The Royal Flight”—six vodka shots paired with six caviar bumps.

 

The cocktail lounge at Caspian’s will be open from 11 a.m. to 2 a.m. daily, with the kitchen closing at 10 p.m. nightly.
