Bramàre to Open Next Month, Offering Inspired Italian Fine Dining and World-Class Cocktails

Bramàre is set to open at The Collective (3900 Paradise Road) in late June. It will offer inspired Italian fine dining in an engaging setting for those seeking a unique culinary experience and wanting to escape the everyday world. From the Italian word meaning “to crave,” Bramàre will seamlessly blend a sensual atmosphere, exquisite cuisine, and world-class cocktails.
Bramàre marks the latest venture for the esteemed Las Vegas restaurant group, Batch Hospitality, from industry veterans Constantin Alexander and Evan Glusman who boast 50 years of expertise as Vegas staples including Piero’s Italian Cuisine, Hakkasan Group and Table 34.
The kitchen is overseen by Executive Chef Joe Valdez III, whose modern approach to this classic cuisine shines through the daily house-made pastas and sauces and the incorporation of distinctive dishes. Guests can start their dining experience with small format dishes, including Ora King salmon collar with Calabrian cucumbers and agrodolce ($16) and Calabrian pork belly with bread, pickled onions and cashew butter ($16), before continuing their journey with the medium and large format dishes.
Menu highlights include:
- Swordfish Milanese, pan-fried with arugula and fennel and served tableside with a bright and delicate caviar sauce ($42)
- Braised beef cheek pizza, with soffritto, dollops of goat cheese and potato ($18)
- THE toast, nduja, caciocavallo cheese, caramelized onions and pecorino romano ($14)
- Brasato, braised beef cheeks, Verde fregola and parsley salad with pickled chilis ($42)
- Tagliatelle pasta, with parmiganno-reggiano, fresh sage and a wild boar ragu ($58)
As the Italian saying goes, “Un pranzo senza vino è come un giorno senza sole” (A meal without wine is like a day without sunshine). Bramàre will offer a vast selection of artisanal wines from around the world along with a world-class cocktail program.
Co-created by Alexander and Lead Mixologist Oscar Takahashi, Bramàre’s cocktail menu stands as the restaurant’s crown jewel, boasting a list of truly one-of-a-kind creations. Utilizing house-made syrups, infusions and the freshest of garnishes, the cocktails are an exploration of flavors, cultures and emotions, where every sip tells a story and every glass is a testament to his artistry. Much like the food menu, the cocktail offerings will rotate seasonally to align with Bramàre’s promise of exceptional and fresh quality experiences. Bringing a fresh new take to Las Vegas, standout cocktails include:
- “The Bragato,” a nitro-infused tableside affogato that will make you forget you ever had another coffee cocktail ($18)
- “You Makin’ A Me Caprese,” with Moletto Tomato gin, Carpano Antica, balsamic agrodolce, strawberry, lemon, basil and cucumber ($17)
- “The Bramare Old Fashioned,” with Henry Mckenna 10yr bottled in bond bourbon, sibona Piedmontese amaro, blade mace, vanilla, green cardamom, demerara, aromatic and orange bitters ($19)
- “Speyside Swizzle,” with Glenmorangie 10-Year Monkey Shoulder Scotch, Bruto Americano, St. George Spiced Pear Liqueur, coconut, pineapple, limes, chipotle cacao ($18)
