Pamilya x Famiglia: A Filipino-Italian Culinary Celebration in
Collaboration with Renowned Chef Roy Ellamar
This first in a series of exclusive dinners will honor the celebrated chef’s indelible impact on Las Vegas’ culinary scene with a one-of-a-kind fusion feast by Ellamar and AMARI’s Alan Mardonovich
AMARI Italian Kitchen & Wine Shop, located on the UnCommons campus across from the new Durango Casino & Resort in southwest Las Vegas, has announced the first in a series of exclusive collaborative dining events, Pamilya x Famiglia, featuring renowned Chef Roy Ellamar. In collaboration with AMARI’s culinary director, Chef Alan Mardonovich, the duo has crafted a unique multi-course, family-style dinner that artfully blends the bold flavors of Filipino and Italian cuisines. This one-night-only event will take place on Monday, Sept. 16 and is priced at $75 per person, with future culinary collaborations to be announced soon.
The celebration will begin with a Welcome Slushie made with Italicus, coconut and light rum. From there, guests can savor starters including crudo kinlaw made with tuna, calamansi and calabrese; okoy, Filipino fritters made with sweet potato, summer squash, collotura aioli and bottarga; and burrata and focaccia with manila beans, heirloom tomatoes and locally-sourced mushrooms. Entrée selections will include a fusion of porchetta and lechon accompanied by arugula salad, salsa verde, atchara and sawsawan; whole roasted branzino with fennel, charred lemon and ala pobre; and mafaldine palabok with roasted shrimp broth, chicken chicharron and scallion oil. For dessert, guests can indulge in ube panna cotta featuring Alphonso mango, macapuno and sweet basil; and banana lumpia with black sesame, jackfruit, ricotta and burnt honey. The evening will honor Chef Ellamar’s celebrated Las Vegas career, as he prepares for new ventures in Sonoma, Calif.
Throughout the dinner, guests can enhance their dining experience with a curated selection of cocktails, beers, and wines from AMARI’s extensive collection of Italian and domestic favorites. Seatings are available every half hour from 5:30 to 7:30 p.m., with tickets available for purchase here.
