Chef Michael Vakneen and LEV Group aim to bring the perfect Neo-Neapolitan pizza to Las Vegas’ Chinatown neighborhood, with their latest concept, Double Zero “ØØ” Pie & Pub. Taking a different approach that is Italian-inspired but influenced by Japanese culture for cocktails and atmosphere, Double Zero is starting a new culinary game.  Adding to its unique craftsmanship, the pizzeria recently launched its Chef Takeover Series, a monthly activation that allows renowned chefs to join forces with Chef Michael Vakneen and create masterful menus.

The Chef Takeover Series provides a platform for chefs to showcase their talents while embracing Double Zero’s signature tactics and style. Participating chefs are challenged to infuse their expertise into a three-course “Takeover Menu,” inclusive of an antipasto, a pizza and a dessert of their choice, accompanied by an optional cocktail. One of the highlights of the series is the use of Double Zero’s dough, made with the finely milled 00 (double zero) flour, which is less commonly used for traditional pizza. The dough gives each pizza the elastic, soft texture essential to Neapolitan pies. Guests can expect a unique dining experience as each chef integrates their own creativity and culinary flair into the carefully crafted menu.

“Challenging fellow chefs is a good thing, as it is a healthy push for creativity,” said Michael Vakneen, Double Zero’s head pizzaiolo and chef partner. “Demonstrating their own style while staying within the boundaries of Double Zero allows for a playful menu with acknowledgment of both our expertise.”

 

The monthly activations will occur at the end of each month from 6-9 p.m. at Double Zero located in Chinatown at 3853 Spring Mountain Rd. Upcoming Chef Takeovers include:

  • Sunday, Feb. 25 featuring Chef Josh Smith from Delilah
  • Thursday, March 28 featuring Chef Crystina Nguyen from This Mama’s House
  • Sunday, April 28 featuring Chef Brian Howard from Sparrow + Wolf and Half Bird

Future takeovers promise more culinary delights, including Chef Nicole Brisson from Brezza and Bar Zazu, and Chef Roy Ellamar from Fine Company.
