Summerlin restaurant offers fresh gluten-free, vegetarian items

 

As the seasons change, so too do the menu items at Summerlin’s most in-ventive eatery, Hearthstone Kitchen & Cellar at Red Rock Resort.

 

While holding tight to the backbone that made it a Las Vegas favorite, Hearthstone, will expand its rustic-refined approach to food while offering an array of new gluten-free and vegetarian items, with an emphasis on seasonality and freshness.

 

After opening Hearthstone in October 2014, Executive Chef Brian Massie promised to keep his menu evolving with the boldest and brightest of ingredients while still keeping the crowd favorites available to guests. With the unveiling of his newest menu, he has done just that.

 

Authentic handmade pizzas and signature dishes such as the spicy Calabrian Shrimp Pasta re-main as offerings, but Chef Massie has added soon-to-be favorites to the menu, all of which combine creativity with the comforting feel of Hearthstone. Included in the new slate of items is a succulent pork chop made with apple mustard butter and pork jus, a triumphant wood-roasted octopus dish prepared with saba glaze, smoked potatoes and capers and a diverse assortment of new freshly prepared sandwiches, such as the New England Lobster Roll — made with fresh, imported lobster — and a gooey Adult Grilled Cheese prepared with truffle gouda. Those looking for lighter fare can satisfy their craving with the Vegetable Salad, a marriage of organically-sourced green beans, corn, asparagus and tomatoes, or the Roasted Jalapeño Hummus.

 

The preparation of the new menu items fully highlights the humbleness of fresh ingredients in their truest form.

 

“We will only create dishes we’re proud of and would eat ourselves,” Massie said. “The things we’ve added to the menu really expand our offerings and showcase what we’re all about, and that’s having a great meal in a comfortable neighborhood environment.”

 

Along with the food, Hearthstone possesses a wine list to be desired, as it can transport guests to from Italy to France and to Northern California all with just the cork of the bottle.

 

Aside from the warm, welcoming environment and succulent food, Hearthstone continues to be a wine lovers dream and a culinary masterpiece.

 

Hearthstone is “responsible for cooking some of the best food in all of America,” Top Chef: All-Stars winner Richard Blais has said, adding that it is “one of the most beautiful restaurants I’ve ever been in.”

 

Since opening, Hearthstone has established itself as a leader in simple, graceful food. With the new menu items, the Summerlin staple is continuing to carry the torch for seasonal, approacha-ble cuisine.
