NOBU CAESARS PALACE ARE STEALTHY AND DELICIOUS
Shhh! Sometimes, the most delicious thing about knowing a secret is being able to share it. That certainly rings true with the secret menu items available at Nobu Restaurant and Lounge Caesars Palace. While it’s no secret that Nobu Caesars Palace is home to the only Nobu Teppan in the US and is the only Nobu in Las Vegas to feature brick oven dishes, what is hidden is the fact there are a number of items that are available that aren’t featured on the menu. Vegetarian and vegan sushi items are always available including avocado tartar, yuba tiradito style, okra dry miso, tofu new style and cucumber sunomono. From the kitchen, dishes including brick oven roasted baby vegetable, tofu toban, cabbage steak, heirloom tomato ceviche, and vegetable skewers are available anytime. There are also a number of Nobu Signature items that can be prepared gluten free to accommodate any and all gluten sensitivities and intolerances, which include but are not limited to the Yellowtail Sashimi with Jalapeno, the New Style Sashimi, Alaskan Black Cod and Beef Tenderloin Toban-yaki to name a few.
Brewed during the coldest days of the year on Sado, the largest island in the Sea of Japan, superior, high-quality Hokusetsu saké is exclusively available at Nobu restaurants worldwide. Now, this award-winning brand introduces three new sakes available at Nobu Restaurant and Lounge Caesars Palace. Released with limited quantities, Daiginjo YK35 Shizuku is made from Yamada-nishiki rice – usually only used to make the sakes that are entered in competitions. After fermentation is complete, a dripping procedure is used instead of an ordinary procedure of pressing. This process is the reason why Daiginjo YK35 Shizuku delivers a delicate yet deep taste. Hokusetsu made Junmai Daiginjo Koshitanrei Hikari sake from a special type of sake rice called Koshi-Tanrei. This sake rice, or “sakamai” in Japanese, is harvested by farmers exclusive to Hokusetsu. This award-winning Hikari version has the highest quality among “Koshitanrei” brands. Hikari is “Genshu” which means it is undiluted. It has a powerful but elegant taste. The design of the bottle is also special and unique. The most exclusive sake, Daiginjo YK35 Shizuku Jukusei Koshu means aged in Japanese and is $3000. Daiginjo YK35-shizuku is aged for three years under low temperature in the Hoskusetsu brewery to make this version of sake. By waiting years to mature, taste becomes complex and creates more depth. When compared with fresh Daiginjo YK35-shizuku, there is a more calm fragrance but richer taste. Ask your server for a sake pairing on your next visit to Nobu Restaurant and Lounge Caesars Palace.

Besides its extraordinary taste and multitude of flavors, Chef Nobu Matsuhisa firmly believes that Ramen is the one great dish that can soothe the soul and warm up the insides. Considered the ultimate comfort food and available at Nobu Caesars Palace Restaurant and Lounge, Chef Nobu’s interpretation of Ramen is unmatched and is certain to revitalize the soul. So much that the New Man Ramen is named by Chef Nobu himself:
“If you’re not feeling very well, and you eat my ramen, I’m certain that it will make you feel like a new man the next day,” says Chef Nobu.
To create this comforting and popular concoction, Nobu uses traditional Ramen noodles. The broth is cooked with a combination of chicken and pork for more than 24 hours and is finished with a miso tare base. The New Man Ramen is accompanied with menma (bamboo shoots), bean sprouts, corn, and a traditional Japanese soft boiled egg. To top it off, the soothing ramen includes pork belly that is prepared in a three step process; it’s cured, braised and then pressed so when it’s sliced, each delicious piece is the same size. Finished with cilantro, Serrano peppers, and chili threads, the New Man Ramen is also served with sesame seeds, dry miso, and fried garlic chips in Ryu (chili oil).
Available on the world’s only Nobu in-room dining menu, guests staying at the first-ever Nobu Hotel Caesars Palace Las Vegas can enjoy the New Man Ramen inside the comfort of their perfectly-appointed hotel room. The New Man Ramen is also available for lunch at the world’s largest Nobu Restaurant at Caesars Palace.
