The 80-foot long Ultimate Smoker and Grill, designed and operated by grill-master Trace “Rib Whisperer” Arnold, is the size of a tanker and is hauled by a semi. In the unique smoker chamber, Arnold can slow-smoke more than 2,000 pounds of meat. Hidden beneath the 20-foot hydraulic lid is a wood-fired grill with the capacity to cook 1,000 hotdogs, 500 hamburgers or 200 16 oz. steaks at once.

About Trace Arnold:
Trace Arnold is the quintessential Texas cowboy. He grew up on a dude ranch in Justin, Texas and has spent the last 25 years mastering his pitmaster skills by preparing BBQ and smoked meats for corporate events and private parties. In 1997 he created The Ultimate Smoker & Grill, an 80-foot mobile machine that can slow smoke more than 2,000 lbs of meat, 1,000 hot dogs, 500 hamburgers or 200 steaks at one time. Years ago, he was awarded The Golden Pig (a fat little trophy) after a Cajun friend challenged him to a rib cook off at his home. After a landslide win he has forever become “The Rib Whisperer” – a name given to him by his wife and friends. Arnold, along with his partner, Jason Hall, opened 3 Stacks Smoke & Tap House in February 2013. The namesake of the restaurant is attributed to the three large smokers that welcome diners upon entrance, each dedicated to a different selection of meat.
