Mayfair Hotel & Spa Appoints Dario Correa as Executive Chef
The Mayfair Hotel & Spa has recently appointed Executive Chef, Dario Correa. Correa will oversee all culinary functions of the hotel including, Italian restaurant Spartico, Above the Mayfair rooftop, in-room dining, catering and banqueting services.
Chef Correa was born and raised in Argentina from second generation Italian immigrants. While growing up he was nurtured by the aromas and flavors of his heritage. He was inspired by his Grandmother hand making raviolis and mother baking pastries to sell.
“We are pleased to introduce such a passionate and experienced chef to our team at The Mayfair Hotel and Spartico restaurant,” said Edwin Mendez, director of Food and Beverage at The Mayfair Hotel and Spa. “His strong background and simplistic food philosophy will enhance guests dining experiences by keeping our dishes true to their ingredients.”
Prior to joining The Mayfair Hotel, Correa worked as the Food and Beverage Director and Executive Chef for The Grand Beach Hotel in Miami Beach. More recently, he was the Executive Sous Chef for the Delano’s legendary Blue Door. In the past, he served as a restaurant consultant for the pioneer Italian themed, Casa Tosana at the Biscayne Corridor.
Correa also participated in the opening of Barton G the Restaurant, while operating under the supervision of creativity master Ted Mendez. A few years later, he became Banquet Chef for The Raleigh Hotel working alongside celebrity-personality chef Eric Ripert, owner of Le Bernadin in New York. Correa landed his first position at the Blue Door, as Chef de Partie. During that time, he met French native chef Claude Troisgros who inspired Correa to adopt him as a mentor by his cooking techniques.
“I am excited to bring my creativity and roots to an inspired trattoria as Spartico where the authentic simplicity of the food is highlighted in every single detail of the dishes,” said Chef Dario Correa. “I like the (pureness/genuineness) of rustic authentic cooking; it pleasures the palate and warms the soul.”
Chef Correa graduated from the Institute of Buenos Aires (IBARS) and then moved to South Florida. Correa constantly studies new flavors, ingredients and ideas from any source available in order to renovate and redesign old techniques into a successful new flavor. He believes each flavor needs to have the individualism of the ingredient, the passion of cooking and the pleasure of the commensal. As Executive Chef, Correa’s strong creative drive will align seamlessly with the overall vision of The Mayfair Hotel & Spa.
