- From flames to smoke, the Absinthe Cart at ARIA’s Sage is an experience guests remember no matter how many sips of the anise-flavored spirit they consume. After dinner, a trained server will guide adventure-seeking guests through the restaurant’s extensive absinthe selection. The tableside presentation is complete with meticulous steps designed to create a customized concoction. Guests are encouraged to take photos of the extraordinary demonstration and trust us – it surely is a Tweet-worthy photo opp.

Created by Executive Chef Christina Olivarez, winner of Food Network’s “Chopped,” the menu at Diego offers the freshest and most authentic Mexican cuisine in Las Vegas.
