Mott 32 Launches New Seasonal Menu for Fall and Winter

Mott 32, the multi-award-winning luxury Chinese restaurant, is ushering in the autumn and winter season with a new seasonal menu that pays homage to China’s Fukien province. The menu celebrates the important role that Fukien cuisine has played in China’s culinary history by presenting authentic dishes, crafted using seasonal ingredients and traditional preparation techniques, with a particular focus on fresh, locally sourced seafood. The menu launches at The Venetian® Resort Las Vegas on Sept. 27.
Chef Lee Man Sing, Group Executive Chef at Mott 32 and Maximal Concepts, shares, “Fukien cuisine, often known as ‘Min Cai,’ is entwined in China’s culinary heritage and loved by people all over the world. During my recent travels, I connected with Chinese people in Canada and the Philippines and resonated with their deep yearning to be embraced by the comforting flavors of Fukien recipes. Through this seasonal menu, diners will be taken on a culinary journey through the coastal province, experiencing wholesome dishes that honor timeless traditions whilst being elevated for the modern guest.”
Fukien cuisine places great importance on preserving the natural flavor of ingredients. Characterized by subtle and delicate tastes, each bite strikes a balance between sweet, savory and umami notes. Highlights of the autumn/winter seasonal menu include:
- Whole steamed red sturgeon crab, glutinous rice: delicate rich umami of red sturgeon crab with aromatic garlic and fragrant scallions accompanied by a chewy glutinous rice
- Braised duck with ginger: tender and succulent duck meat complemented by the subtle heat and distinctive aroma of ginger with red dates, wood-ear mushrooms and sesame oil to enhance the depth of flavors
- Wok-fried oyster omelette, minced pork, crab roe: oysters, rich crab roe and savory minced pork enveloped in an omelette with vibrant garlic and fresh green onions
Mott 32 Las Vegas Executive Chef Alan Ji expressed his enthusiasm for the Fukien-inspired menu. “To bring the authentic flavors of Fukien cuisine to our guests is such a wonderful honor,” Chef Ji said. “Each dish showcases the delicate and harmonious taste that Fukien cuisine is known for. We designed this menu with the intention of taking our guests on a memorable culinary journey.”
Enhancing the dining experience, the talented Mott 32 bar team has created cocktails of rich fruits and earthy elements that capture the essence of the fall and winter season, including:
- Hanami: a warm and spicy blend of Wild Turkey 101 Rye, Roku gin, umeshu, yuzu, shiso, ginger beer and chrysanthemum
- Jade Apple: Ketel One Grapefruit and Rose with sour apple honeydew and cherry tomato tanghulu
- Duke of Suffolk: a floral blend of London Dry Gin, Earl Grey and English breakfast tea, with a cold cream float
- Peking Duck Old Fashioned: a Hong Kong twist on an old favorite with Woody Creek Colorado Bourbon Whiskey, duck fat wash brown sugar and orange bitters
