Carson Kitchen Launches New Menu with Exotic Ingredient Features

Carson Kitchen’s claim to fame derives from its creative and reimagined flare for the comfort food classics using seasonal ingredients. With the summer months quickly upon us, that calls for a menu change. Chef and Owner Cory Harwell has developed new menu items now available at the Downtown Las Vegas location.

 

“We had some fun developing this menu and took bold steps with many new ingredients that we want to unveil to our guests,” Harwell said. “Our approach to reinvent, reimagine and recreate dishes you’ve already fallen in love with remains the same. This menu proudly features the best cuts of venison, rabbit and snake, along with the introduction of kimchi, but in a way that is familiar and recognizable to all palates.”

 

Some of the new menu selections include:

·    Venison Tacos, asada-style, basil cream ($15)

·    Sloppy Joe with kimchi, gochujang ($18)

·    Broccoli Crunch with sweet pepper vin, crispy wontons ($14)

·    Three Bean Salad with tasso ham, green goddess dressing ($15)

·    Mexican Street Polenta with cotija, poblano ($15)

·    Gin Riggies with gin sauce, rabbit and snake sausage, tomato cream ($15)

·    Minted Snap Peas with bourbon butter, pistachio ($14)

·    Rosé Parfait with strawberry chantilly, rose petals ($12)

Additionally, a few new libations have been added to the hand-crafted cocktail menu including “Fred’s Club,” with pisco, chambord, basil, simple syrup, fresh lemon, and “Lager?! I Hardly Know Her,” made with vodka, yuzu, strawberry and lager. A reserve wine list has been added to the beverage program with selections including Ghost Block ‘Estate,’ a Napa Valley Cabernet Sauvignon, Maggy Hawk ‘Skycrest,’ an Anderson Valley Chardonnay, and Taittinger ‘Brut La Francaise,’ a French Champagne.

Carson Kitchen is open for dine-in Monday through Thursday 11:30 a.m. to 10 p.m., Friday and Saturday 11:30 a.m. to 11 p.m., and Sunday 11 a.m.-10 p.m. featuring the brunch menu from 11 a.m.-4 p.m.
