 Amaya Modern Mexican has officially opened its doors at The Cosmopolitan of Las Vegas, redefining the city’s dining and nightlife scene with bold cuisine, innovative cocktails and mesmerizing entertainment. Helmed by Michelin-starred Chef Jason McLeod, Amaya brings the vibrant flavors of Mexico’s coast to life in an exhilarating setting where culinary artistry meets pulsating energy.

 

Guests are transported to a sensory playground as DJs spin electrifying beats, live performers dazzle, and the restaurant’s design evokes the lush, tropical elegance of the Yucatán Peninsula. The result is an unforgettable atmosphere where diners are encouraged to sway to the rhythm, dance in their seats and immerse themselves in their surroundings.

 

The menu, curated by Chef McLeod, showcases his mastery of flavor and his deep connection to Mexico’s culinary heritage. Signature dishes include:
  • Amaya’s Surf & Turf – A show-stopping feast featuring an 8 oz. Wagyu filet, 20 oz. dry-aged New York steak and chili lime lobster tail, paired with a trio of salsas and warm tortillas.
  • Birria Short Rib – Slow-cooked to perfection and served with corn purée, pickled onions and cotija cheese.
  • Whole Grilled Angry Fish – An audacious blend of mustard frill, fermented chiles and garlic butter sauce, served with grilled flour tortillas.
  • Lobster Enchiladas – Enveloped in a rich, creamy lobster sauce.
Citrusy ceviches, zesty aguachiles and fiery tiraditos round out a menu designed to awaken the palate and celebrate the spirit of communal dining.

 

Amaya offers an extraordinary collection of aged tequilas and mezcals, celebrating Jalisco’s multi-generational heritage. The cocktail menu showcases inventive libations, including:
  • Mano a Mano – Flecha Azul, agave syrup, Seville orange bitters and cocoa bitters.
  • Shark Bait – Sonrisa Platino rum, Luxardo Maraschino liqueur, lavender syrup, grapefruit juice, lime juice and agave syrup.
  • Smoke & Mirrors – Producer Ensamble Mezcal, Fernet, Ardbeg whisky, vanilla syrup and hint of chocolate.
Chef McLeod’s culinary philosophy reflects a 30-year career of global exploration and innovation. From earning two Michelin stars at RIA in Chicago to embracing the coastal traditions of Mexico, McLeod’s passion for culture, flavor, and connection is at the heart of Amaya’s menu.
