EATALY LAS VEGAS SETS OPENING DATE FOR TWO HIGHLY ANTICIPATED CONCEPTS
Opening December 27, Eataly Bar & Pizza al Padellino at Park MGM Mark Next Generation for Las Vegas’ Premier Italian Destination
Eataly Las Vegas at Park MGM, the leading destination for authentic Italian cuisine and culture, is celebrating its sixth anniversary with the unveiling of two exciting new concepts: Eataly Bar and Pizza al Padellino. Opening on December 27, these latest additions mark the first major build-out since Eataly Las Vegas opened its doors. With a full-service bar, large screen televisions, and spacious indoor and outdoor open seating, Eataly Bar and Pizza al Padellino offer a convenient design and more ways to experience a gourmet taste of Italy — whether it’s for the big game, a quick bite between meetings, or a perfect night out with friends and family.
“As we hit our sixth anniversary, we’re excited to continue evolving the Eataly experience to exceed the needs of our Las Vegas guests,” said Stefano Murialdo, Vice President of Operations at Eataly North America. “Eataly has always been about celebrating Italy’s rich food culture, and with these new concepts, we’ve created a diverse range of dining options whether you’re looking for a fine-dining meal, a casual bite with a glass of Italian wine, or an authentic pizza on-the-go.”
Josef Wagner, Vice President of Food & Beverage for Bellagio and Park MGM said, “Eataly’s been a marquee establishment for the resort since opening day. Park MGM has become a hub for sports fans with our proximity to the stadiums and arenas, and these new concepts will be the perfect addition for our guests to enjoy Eataly’s exceptional food and drink. We’re excited to see this next chapter unfold.”
Eataly Bar
Located just steps from the Las Vegas Strip, Eataly Bar is an inviting, 30-seat gathering spot where guests can indulge in 11 unique variations of Italian spritz, craft cocktails, and a curated selection of Italian wines. Featuring a stylish horseshoe-shaped bar, light wood furnishings, and lush green accents, the bar captures a fresh aesthetic reminiscent of an Italian piazza. The space offers both indoor and outdoor seating, with large windowpanes that can be removed to allow for open-air flow, creating a seamless al fresco experience.
With added TV screens, Eataly Bar will be an exciting destination for sports fans looking to enjoy a game while indulging in Italy’s finest drinks and pizza. Positioned next to Pizza al Padellino, pizza can be delivered directly from the oven to Eataly Bar’s seats, guaranteeing guests never miss a minute of the action. Additionally, Eataly Bar will feature a Bruschetta menu, offering a variety of delicious Italian-inspired toppings to complement the bar’s craft cocktails and wines.
For those on the go, Eataly Bar introduces Drinks to Go – where guests can grab their favorite cocktails or wines to enjoy as they explore the venue.
Pizza al Padellino
At the new Pizza al Padellino counter adjacent to Eataly Bar, guests can order fresh, made-to-order pizza in a fast, convenient manner. Eataly Las Vegas will be the first Eataly location in the United States to offer this unique pizza, which hails from Torino, the city where Eataly was founded. Baked in small, round pans, this pizza is slightly browned on the outside, giving it a delightful crispy edge while maintaining a soft, pillowy interior. Guests can choose from a variety of toppings, including classic prosciutto, fresh mozzarella, and seasonal ingredients.
Cucina del Mercato’s Expanded Seating & Ordering Options
Eataly Las Vegas has expanded its vibrant Cucina del Mercato dining area, adding 116 new seats across both new and existing concepts. The updated space now features additional seating at Gran Caffè Milano, as well as a brand-new open seating area conveniently located just steps from Eataly Bar and Pizza al Padellino.
The new open seating area offers guests greater flexibility, with the option to order from any counter and have their food delivered when ready via a buzzer. Alternatively, guests can scan a QR code at their table to place an order directly. This seamless QR code system is ideal for larger groups or those wishing to sample a variety of dishes from different counters without the need to wait in line.
Earlier this year, Eataly Las Vegas unveiled the first phase of Cucina del Mercato’s renovations, introducing several exciting stations: Le Polpette, serving traditional Italian meatballs and burgers; La Pasta Fresca, where artisans prepare fresh pasta daily; and La Carne e Il Pesce, a showcase of sustainably sourced meats and seafood.
Eataly Bar and Pizza al Padellino will occupy the space previously home to the Wine Shop on the lower level of Eataly Las Vegas. Additional details, including photos and updates, will be shared in the coming weeks.
