The team curated two new menu items, ideal for new year wellness goals: the new Rainbow Bowl and the Roasted Sweet Potato Taco. Both dishes feature the comfort superfood, sweet potato – plus sustainable ingredients, made-from-scratch sauces and new bold flavors.

Perfect for vegetarians, the Roasted Sweet Potato Taco features roasted sweet potato, cabbage, corn nuts, salsa de arbol, avocado crema, cilantro and onion on a flour tortilla. Enjoy à la carte, or as part of a mix-and-match two taco plate with chips and Rubio’s “no-fried” beans.

Guests will also enjoy the new Rainbow Bowl, bursting with vibrant colors and nutritious ingredients. Protein-packed with a choice of grilled chicken, steak or seafood, flavorful ingredients include citrus rice, black beans, roasted corn blend, avocado slices, roasted sweet potato, Tajin pineapple salsa, red cabbage pickled in-house, a scratch-made avocado crema, and an all-new al pastor sauce.
