Newest UnCommons Concept to Bring the Fiesta with Exclusive Tequilas, Scratch-Made Margaritas, In-House Aguas Frescas, and Cocktails Created by Heralded Hispanic Mixologists
Siempre, J.B., AYYA Hospitality Group’s haute Mexican restaurant set to spice up UnCommons on July 3, will feature scratch-made beverages celebrating the rich heritage and bold flavors of Mexico. Designed to expertly complement the menu of authentic desert-to-sea dishes, guests at Siempre can explore in-house Aguas Fresca and margarita programs, two exclusive tequila partnerships, and innovative cocktails conceptualized by celebrated Hispanic mixologists across the Las Vegas Valley.
In partnership with Dos Caras Spirits, a woman-owned tequila company in Jalisco, Siempre will be the exclusive purveyor of Dos Caras x Siempre ”Special Reserve Blend”. Siempre will be the only place in the world to experience the blended reposado tequila, aged for 6+ months by the Dos Caras team in the “Golden Triangle of Tequila” area in Mexico, available for sipping and in margaritas.
Siempre will also serve a Buena Suerte, or “Good Luck,” shot collaboration with Patrón. Guests who purchase a Buena Suerte shot will receive a commemorative gold coin to flip for the chance to win a second Buena Suerte shot featuring Patrón on the house. Additionally, guests who return to Siempre with their coin can flip for up to one free Buena Suerte shot per visit.

A glimpse into Siempre’s Beverage Program
In-house Aguas Fresca Program
Promising guests an escape from the desert heat, Siempre’s Aguas Frescas will tantalize taste buds and refresh parched palates. Inspired by the thirst-quenching beverages with centuries-old roots in Mexico City, Siempre’s Aguas Frescas will be expertly crafted in-house and utilize fresh fruits and premium ingredients. The Aguas Frescas will also be prominently showcased in the margarita and cocktail programs. Flavors include melon, cucumber, hibiscus, and horchata.
Signature Margaritas
Featuring six unique options available on the rocks or blended, Siempre’s margarita program spotlights Dos Caras tequilas. Four will include Dos Caras x Siempre Special Reserve Blend, exclusively available at Siempre, and two will feature Dos Caras Blanco. All syrups utilized in Siempre’s margaritas will be prepared daily on-site from scratch. Highlights include:
- Siempre Margarita: Dos Caras x Siempre Reposado, mango syrup, agave, and lime juice served with a chamoy rim.
- Hibiscus Margarita: Dos Caras x Siempre Reposado, mezcal, agave, lime juice, and hibiscus served with a hibiscus salt rim.
- Tamarindo Margarita: Dos Caras x Siempre Reposado, tamarindo syrup, lime juice, agave, and bitters served with a black lava salt rim and pulparindo candy garnish.
- Passion Fruit Margarita: Dos Caras x Siempre Reposado, cointreau, passion fruit syrup, honey, and lime served with a Chamoy rim and garnished with a marigold.
Signature Cocktails
Siempre will offer a collection of 10 specialty cocktails conceptualized by Las Vegas mixologists with Hispanic backgrounds. The program spotlights tequila, mezcal, rum, sotol, and scotch libations. Highlights include:
- La Rosa: Nocheluna Sotol, mezcal, rose syrup, and lemon juice served in a tiki skull glass and garnished with dried rose petals.
- Cha-Mango: Sonrisa Rum, mango syrup, honey, and lime juice garnished with mint sprigs.
- Can’t Elope: Espolon Blanco, Aperol, ginger syrup, agave, lime juice, and cantaloupe served in a tiki skull glass and garnished with mint sprigs.
- RepoChata : Don Fulano Reposado, horchata, and cinnamon syrup topped with Cajeta and cinnamon sprinkle.
- Oaxacan Old Fashion: Don Julio Reposado, mezcal, agave, Ango, and bitters garnished with a grapefruit twist.
